Indian Hushpuppies

Onions fried in a batter of chickpea flour.

Ingredients
  

  • 3 Green onions Chopped into 1-inch pieces
  • 1 handful Coriander leaf rough chopped
  • 1/2 White onion Cut into slivers, top to bottom
  • 1 tsp Ground coriander
  • 1 tsp Salt
  • 1/2 cup Chickpea flour
  • 1/4 cup Water you may need a bit more
  • 3 cup Cooking oil

Instructions
 

  • Combine both types of onions, coriander leaf, coriander, and salt
  • Sprinkle with the chickpea flour
  • Add water to make a thick paste. You should be able to make a loose ball with the mixture.
  • Refrigerate for at least 30 minutes. The mixture will hydrate and become stickier.
  • Fry in hot oil until browned.

Notes

Don’t worry too much about the consistency, even a very loose mixture will fry up into little cakes. You can do this with just about any vegetable or herb mixture but onion is my favorite.
I use cold-pressed organic sesame oil to fry in. Sometimes I add a little ghee to the oil.
I serve this with a yogurt sauce (like yogurt, rooster sauce, garlic, lemon, etc.).
