Combine both types of onions, coriander leaf, coriander, and salt
Sprinkle with the chickpea flour
Add water to make a thick paste. You should be able to make a loose ball with the mixture.
Refrigerate for at least 30 minutes. The mixture will hydrate and become stickier.
Fry in hot oil until browned.
Notes
Don't worry too much about the consistency, even a very loose mixture will fry up into little cakes. You can do this with just about any vegetable or herb mixture but onion is my favorite.I use cold-pressed organic sesame oil to fry in. Sometimes I add a little ghee to the oil.I serve this with a yogurt sauce (like yogurt, rooster sauce, garlic, lemon, etc.).
